The panel initially noted strawberry tarts, macaroons, pot pourri, rose petals and sweet mulled wine with raspberry pop tarts and sunflower oil. With a little water we found it opened up extremely well towards heather honey, Turkish delights and tropical fruit diluting juice. The palate was sharp and hot on arrival, but quickly settled towards liquorice, toasted fennel seed, hot paprika and orange drizzle cake with lots of sultanas. Water softened things nicely and brought more citrus zing, dried cranberry, vanilla buttermilk icing, dark chocolate and a lovely mix of spicy American oak and stewed dark fruits. Matured for 8 years in a bourbon hogshead before transfer to a 1st fill oloroso sherry hogshead.
