Whisperings of smoke on the nose – like a distant Meerschaum pipe or rosemary on bonfire embers; hints of Turkish delight, treacle, liquorice, Savlon and clove. The palate finds soft suggestions of peat smoke, cinders and ash, sherbet lemons and roast pork with five-spice powder rub. The reduced nose suggests a poke of chips with vinegar or cleaning out a mountain bothy in the morning (cold fire, Dubbined leather boots, plastic cagoules, black bun and foamy shrimps). On the reduced palate, the smoke is still there but muted; there is toffee sweetness, honey-glazed ham, roasted parsnips, cumin, coriander and chewing burnt twigs.
