Tasting Notes
This one opened with a wonderfully aromatic and scented profile. We found immediate notes of Dundee cake, pollens, sawn hardwoods, pot pourri, maple syrup and toasted pecan nuts. With water this became thicker and showcased a more stodgy fruitiness. Lemon thyme, sandalwood, hessian and baklava with honey were all noted. The neat palate opened with brandy butter, ginger snaps, candied orange peel and eucalyptus oils. Chocolate coated peanuts and game salami were also noted. With reduction everything was softer but still thick and enveloping with Bovril, espresso, bitter herbal extracts and dark chocolate. Matured for 8 years in a bourbon hogshead before transfer to a 1st fill oloroso hogshead.
