A nose to make you sit up and take notice. Notes of sweet Lambrusco, cream sherry, soft peaches and ripe plums were all noted. In addition we found blackcurrant and bramble liqueurs, fig parfait, caramel shortbread, cinnamon and cloves. Reduction brought out sharper red fruits, darker chocolatey notes, old leather, grape must, apricot jam and demerara sugar. The palate was warming, spicy and tannic. Lots of simmering chilli, earthy sherry, balsamic, plum liqueur, weighty leathery texture and strawberry syrup. Water made things softer but the spices were still warm and tingling with blackcurrant sweets, eucalyptus and vanilla caramel wafers. Matured in a bourbon hogshead for 19 years before transfer to a charred red wine barrique.
