Tasting Notes
Initial nosing revealed a highly leathery and nicely dense profile, with underlying soft dark fruits balanced by gentle earthy and tobacco notes. Water brought out elements of bitter orange marmalade, liquorice, cocktail bitters and cedar wood, and a lovely whiff of Iberico ham! The palate was a gorgeous, rich combination of herbal and dark fruit notes: fruit loaf, brown bread spread with treacle, bitter herbal liqueurs, and dandelion and burdock cordial. Reduction enhanced and thickened the texture while adding impressions of waxes, cedar wood and humidors full of unlit cigars. This was matured in an ex-bourbon hogshead for seven years before being transferred to a second fill oloroso hogshead.
