The nose was immediately luscious and classical for this distillery. Wonderfully concentrated and ripe green and exotic fruits on display. Pineapples in syrup, soft waxes, pressed wildflowers, kiwi, hessian, lemon marmalade, butterscotch and a hint of dried mango. Superb! With water we got butterbean hummus and gorse, a resilient earthy streak and subtle notes of spearmint, heather ale, fennel and lychee. Stunningly complex! The palate opened with sweet olive oil cake, heather honey, white pepper warmth and a spicy waxiness. Textural, rich and full of citric and herbal qualities. Reduction brought marzipan, cornbread, honey cake, sunflower oil, cinnamon, dried orange peel and a menthol lick of tea tree oil. Glorious!
