We found ourselves in a hospital minor injury ward being treated with antiseptic for a burn as the smell of oysters being deep fried and Belgian waffles being freshly made took us by surprise. Plenty of smoke on the palate neat with smoked almonds, burnt mince pies and maple syrup infused with hardwood smoke maybe as a marinade for the oysters or to simply add some smoke to the waffles. After reduction we were cooking a chorizo and rosemary pearl barley risotto while we drank mezcal with those typical smoky flavours but also molasses, brown sugar, grapefruit peel and herbs - every single sip becoming an adventure.
