Aromas exceeded expectations as burnt honeycomb, marzipan and hazelnuts merged with raisins, marmalade and treacle on rustic granary bread topped with salted peanuts. A wave of ginger and chillies on the palate sweetened to toffee, fudge and vanilla ice cream with hints of milk chocolate, cola flavoured sweets and polished pine wood. With water came a burst of butterscotch, brioche and warm apple pie served with figs, dates and pecan nuts drizzled with maple syrup. Coffee and chocolate now combined alongside dark cocoa melting on baked banana while creamy custard complimented ginger biscuits and rhubarb. Nine years in an ex-bourbon hogshead before transfer to a Riversaltes Muscat first fill barrique.
