After eight years in ex-bourbon wood we re-racked this into a refill Trinidad rum barrel. We thought the result fun and slightly oddball; on the nose – lemonade, iced tea, flower meadows, honey, spun sugar, rum truffles and cream-filled brandy snaps. The palate conveyed ‘chewing cloves’ and ‘licking a blunderbuss’; chilli jam, rum-flamed bananas with cinnamon and toasted marshmallows, charred wood and ash to finish. The reduced nose combined flaky butter pastries and marshmallows in hot chocolate with rum and raisin, zingy lemon and a pirate’s sea-chest. The reduced palate was a funky evocation of curry, chilli on pineapple, leather, tea chests and cigar ash.
