The nose was big, bold and frankly offbeat – peanut brittle, gingerbread and Portuguese custard tarts, orange liqueur and preserved lemons, seaweed, sloes and charred oak staves. The palate was vaguely rum-like, with a reduction of raisins and cherries, manuka honey on birch twigs, toffee, toasted almonds, molasses, liquorice and leather. The reduced nose had custard Danish and mincemeat pies, but also some strange associations – we mentioned stewed coffee, overdone plum pie, burning seaweed, shisha pipes and humidors. The palate now spoke of PX flavoured ice-cream and cherries in syrup, with a dry finish of liquorice root, nicotine tar and black tea.
