Tasting Notes
A big and highly polished nose that displayed notes of root beer syrup, window putty, aged PX sherry and rainbow sherbet. We also found things like smoked toffee apples, paprika, charred game meats and a balsamic-tinged peat smoke. Water brought out pure iodine, sand dunes, old first aid kits, marmite and black olive tapenade. The mouth was initially full of sharp black fruits, pickling juices and a huge tarry quality. Very thick, leather and with coal smoke, kippers and smoked olive oil. Adding water gave it a superbly textured and syrupy peat profile. Along with black pepper, pipe tobacco, herbal wines and hot ginger. Matured for 11 years in a bourbon hogshead before transfered to a 1st fill American oak PX sherry hogshead.
