Tasting Notes
The aroma neat was like a refreshing old-fashioned mint lemonade, or a gentian, rhubarb, and cinchona spritz using freshly squeezed orange juice and a dry prosecco. Homemade lemon pepper seasoning provided plenty of heat on the palate at first before sweeter flavours of walnut whip and jammy dodgers appeared. Following reduction, we took a tray of classic blondies out of the oven along with an old-school butterscotch tart and lemon slices. To taste, still a sweet chilli spice, but a lot more manageable as we enjoyed toasted almonds, apricot jam spread on a slice of rye bread and an off-dry sake in the finish.
