Hang on what is going on here? Sweet smoked almonds and deep-fried Chinese seaweed sprinkled with brown sugar as well as buttered slices of malt loaf spread with salty, slightly smoky marmalade? Definitely smoke on the palate neat, peat smoke in the rain, five-spiced smoked pork ribs and smoky bacon crisps. Water added burning pine branches, charred pineapple and marshmallows with a medicinal minty aroma lurking in the background. On the palate, a baked Alaska, ice cream and cake topped with brown meringue – also called omelette surprise, and a surprise it was! After eight years in an ex-bourbon hogshead, we transferred this whisky into a 2nd fill Oloroso Sherry hogshead which previously matured whisky from Society cask 29.258.
