A rich and complex aroma that opened with charred breads, seaweed crackers, black olive tapenade, BBQ embers and bath salts. Deeply aromatic and evocative of its Orcadian origins. A little water brought out Pontefract liquorice, Jamaica ginger cake, metal polish, bouillon stock and spiced venison salami. A perfect balance of sweet, smoky, spicy and coastal. The neat palate was initially richly earthy and gamey, lots of Marmite, natural tar, game stock, gentian root, miso and black olive bread. Water brought cranberry gravy, camphor, hessian, pickling juices, spiced ramen broth and old leather polish. A complex and deeply satisfying whisky. Matured in a bourbon hogshead for 14 years before transfer to a 1st fill STR barrique.
