Tasting Notes
This was an al fresco disco of plums stewed in red wine, orange blossom and clarified butter spiked with chocolate bitters. The palate complemented the nose, bringing trail mix tossed in raisin purée at the core of an almond croissant, topped with red grapes and candied orange. Water amplified the sweetness and depth, like nosing a terracotta pot containing treacle, crushed raisins, port and gingerbread. The finish was lighter: gummy bears, a sprig of thyme, a spoon of honey and vanilla-infused raspberry jam. After 10 years in an ex-bourbon barrel, we transferred this to a first fill heavily toasted medium charred barrel for the remainder of its maturation.
