Tasting Notes

This bottle is limited to 2 per member

A pretty left-field nose that departs from this distillerys usual profile. Lots of sooty fabrics, pebbles, struck flints, iron filings, putty, carbon paper and fire embers. Also celery salts, scrunched newspaper and ink. Water brought out treacle, smoked oatmeal, crushed water biscuits and foaming heather ales. In time the sweeter aspects emerged in the form of milk stout, malt extract and barley sugars. The neat palate opened on pine wood, bonfire ashes, fir cones, hardwood resins, medicinal tinctures, salted liquorice and preserved lemons. Some herbal touches of myrtle and cough syrup too. With water we found it softer, juicier, sweeter and more towards soft waxes, putty, lemon cough drops, dried sage, sheep wool oils and buttered malt loaf slices. Matured in a bourbon barrel for 7 years before transfer to a 2nd fill ex-peated whisky barrel.
