Tasting Notes
A perfume of popcorn with a panko breadcrumb crust took us meandering into an izakaya in Tokyo to find little plates of piping hot enoki tempura and a glass of rice wine. The palate was sweeter, a strawberry liqueur with accents of pink peppercorns and shredded basil, followed by a tangy lemon curd and quince jelly, and cardamom custard on the finish. Water gave orange oil to the nose, plus apricots, fresh linen and minted pine sap. The palate was lighter now, delivering bitter lemon and nettle tea, alongside melon bubblegum and cream cake filling. The finish was rose and mint.
