Tasting Notes
Classic fudge walnut brownies were followed by the scent of sweet tobacco and leather, as well as sour cherries in syrup. Smooth and silky on the palate neat, this was like red wine-poached pears and mulled wine with slices of orange, while in the finish the cherries were now soaked in rum and served with a spicy vanilla sauce. After the addition of water, we walked into a cool bodega to escape the hot Spanish summer and enjoyed a pork schnitzel with a spicy bell pepper sauce, roasted onions and garlic mashed potato. Following 10 years in an ex-bourbon hogshead, we transferred this whisky into a first fill PX ex-bodega barrique.
