Tasting Notes
Autumnal air, accented by a sprig of thyme and sliced pears, took us on a forest walk as charcoal-filtered birch sap dripped from our rain-soaked hessian sack. The palate was unexpectedly peaty, blending pomegranate molasses, charcoal, toffee apple sauce and blackcurrant jelly, all topped with shavings of tobacco and wintergreen mint. Water took the nose and palate to a sooty-but-sweet place, like the dying embers of a coal fire extinguished with maple sap, sliced melon and runny honey. The finish was minty, alongside rich tobacco and dark chocolate. After 15 years in an ex-bourbon barrel, we transferred this to a first fill oloroso-seasoned barrique for the remainder of its maturation.
