Initially, an intense varnished wood note before sweet and spicy aromas emerged; rum and raisin dark chocolate, honey spiced oranges and sticky toffee pudding with honey glazed figs. On the palate barrel proof rum followed by an unctuous juicy, fruity sweetness of apple/cherry punch spiced with cinnamon, nutmeg and cloves. After the addition of water, we peeled a tangy tangerine, roasted chestnuts and flambéed a banana with cognac before we tucked into an incredibly moist carrot cake with a fluffy orange icing. After eleven years in an ex-bourbon barrel, we transferred this whisky into a 2nd fill heavy toasted and medium charred hogshead.
