Tasting Notes

A familiar amalgamation of raisins, sultanas and walnuts huddled within a heavy fruitcake that was firmly pinned down by a thick wedge of marzipan. Then lighter notes of jasmine, heather and peach and apple crumble joyfully skipped over marmalade and linseed oil. The palate was heavy and rich with treacle, molasses and navy rum mixed with strong black tea and fresh figs. Water opened up cereal note dimensions and allowed roses, marshmallows and cashew nuts to join toasted rye bread and sweet biscuits. Green herbal flavours laced the palate with woody spices that danced alongside mango chutney, star anise and cinnamon. After spending 11 years in an ex-bourbon hogshead this was transferred to a 1st fill PX hogshead for the remainder of its maturation.
