Tasting Notes
Time for a pie as we all became very hungry. Sweet potato, pumpkin, cherry and coconut cream – there was a pie for everyone! A spiciness on the palate neat at first, allspice, anise and pepper but that was soon followed by the fruity sweetness of dark cherries and a roasted pumpkin soup seasoned with nutmeg. Water added a distinct pipe tobacco note while the taste was from a different planet; roasted peaches with lemon thyme, bourbon vanilla and coffee ice cream sprinkled with toasted almonds. The mash bill for this bourbon consists of 60% corn, 36% rye and 4% malted barley, matured in a #4 char new oak barrel with #2 char heads.
