All the panellists muttered “floral, feisty, funky, fruity?” The chairperson started to fume, but we all thought it was fabulous! On the palate there was no doubt where this dram came from, we might be cruising in the Caribbean Sea but clearly Islay was steering the ship - lime and mango dark chocolate with chipotle and heavily smoked sea salt. Diluted, the BBC Radio 4 ‘Desert Island Discs’ programme came to mind. Amongst other things they ask what one luxury would you take? Easy, as we were now back to single words: balanced, beautiful, bonkers, brilliant. After 14 years in an ex-bourbon barrel, we transferred this whisky into a re-fill bourbon barrel that previously matured rum from Guyana.
