A superbly fresh aroma of just painted timber, earthy petrichor, damp moss and then cut grass, tinned peaches and conference pears poached in brandy. Some musky hints of old garage, oily toolboxes and chamois leather. Water adds ripe yellow plums, freshly brewed nettle tea, apple pie with cinnamon, star anise and vanilla caramel. The palate opened with a thick spoonful of sweetened porridge, biscuits coated in dark chocolate and custard with cardamom. Also, a rather hefty meaty quality with lemongrass, soy and plum glaze and charred red peppers. Reduction brings the brightness of rhubarb, light citrus and a persistently thready and warm spiciness. Some dense plum crumble pudding and key lime pie.
