Popcorn by the old pier

On the nose, flakes of crystal salt flickered atop a cream cheese bagel, with pancetta, cracked black pepper and a sprinkling of popcorn tossed in olive oil and crispy seaweed. The palate was umamier; venison loin rolled in sesame seeds was accompanied by tomatoes on the vine, along with the taste of creosote in the air and exploding pineapples. Water gave the nose a clutch of fishing nets drying in the sun on an old pier, with top notes of redcurrants and a base of custard blended with cardamom, white pepper and marmalade. To taste we found capers, lemon zest and a dish of sweet and salty peanuts finished with shaved fennel.
