Tasting Notes
An exemplary nose from this distillery, beginning with soft putty, furniture wax, pine needles, hessian, clover, olive oil, soot, pastis, freshly baked wholemeal bread, wet clay and pumpkin seed oil. Some light peppery touches and notes of caramel wafers and orange flowers. With reduction the nose develops aromas of saffron, goat cheese, aged cigarettes, naphtha and a rather chalky medical aspect. The neat palate is full of dry waxiness, earthy and peppery notes. Cooking oils, lemon powder, toolboxes, steel wool, mechanical fluids and a rather plush cereal quality. Water makes things spicier and more textually chewy. Notes of lamb and vegetable casserole, green pepper, buttery pastries, paprika, wildflowers, citrus piths and pipe tobacco.
