Potpourri paradox

The initial aroma was a festive potpourri of cloves, star anise and orange zest, mingling with the sweet embrace of honey, toffee and vanilla. Rich notes of peach melba and yellow fleshy fruits led into a rich palate of fruit cake, dark chocolate with chilli and a hint of dessert wine. A drop of water transformed the nose, revealing a softer side of fudge cubes, sugared almonds, and a burst of mango purée and passion fruit. The reduced palate was a fascinating journey, starting with a tropical fruit sundae, vanilla milkshake and orange zest before an unexpected, savoury twist of sea spray and tomato. The lingering warmth of white pepper and cumin seeds provided a well-balanced finish.
