Tasting Notes

The initial aroma was full of fresh lime zest and juice. Key lime pie followed by a big waft of smoke, pin-sharp coastal freshness, Fishermans Friends and smouldering fir wood. Wee notes of lemongrass, freshly shucked oysters and rock pool water in the background. With reduction, we found peat smoke and hot copper wire. Fermenting wash, dark smoked beer and carbolic acidity. More lime juice, star anise and damp dunnage earth. The palate is deeply smoky, a bass-like tarriness, crisp salinity, dandelion & burdock cordial and things like dried herbs, engine oil and burnt heather. Water brings out kippers with a fruity bergamot streak, burnt driftwood, liquorice, natural tar, chilli oil and seawater in lime cocktails.
