Tasting Notes
A slightly more delicate vibe than usual from this typically highly fruity and expressive distillery. Instead we found the nose initially gentle with floral touches such as pressed flowers, peaches, fresh linens, mineral oils, aged leather and touches of fir wood resins and bitter chocolate with sea salt. Water unearthed aromas of mole sauce, smoked chilli, dry earthiness, turmeric and black tea. The neat palate displayed fine balance, with a lovely vibe of salted caramel sauce, golden syrup and spiced figs baked in armagnac. Reduction brought flavours of mustard powder, blackcurrant chews, hessian and liquorice. A splash of walnut oil adding rancio in the aftertaste. Matured in a bourbon barrel for 3 years before transfer to a 1st fill oloroso sherry hogshead.
