A burst of fruit collided mango, banana and apples with strawberry laces and sloe berries as a wave of tartness introduced fresh cranberries. Then fragrant coconut merged with floral incense on a bed of toasted oak while vanilla sponge cake complimented custard. A fizzy tingle of bitter lemon mixer invigorated the tongue as rhubarb and salted peanuts became wrapped in buttery croissants and creamed coconut. Strawberry laces returned with a dash of water but now with cask char and menthol that almost touched on medicinal notes with the slightest vibe of peat and jasmine green tea. Chilli spice ventured forward on the palate while retaining a coconut and custard infusion before we were left with a sense of melon, honey and hints of tobacco.
