Rise and shine

The Panel noted a rich and slightly grubby Orcadian peaty tang about this one. This evolved rapidly and beautifully, incorporating drying coastal characteristics, waxiness and this distillery's trademark heather honey notes. With water the nose revealed crab sticks, beach pebbles, rock pool vibes, seaweed crackers and a general abundance of invigorating freshness. The neat palate was a glorious combination of waxes, herbs, drying peat smoke and natural tar. Water enhanced the fatty and waxy texture, while adding more herbal notes, lemon cough drops and an impression of peaty draff. At 18 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
