St Andrew is not only the patron saint of Scotland but also of sore throats, happy marriages and fishermen. What better to celebrate than with this throat-pleasing dram, reminiscent of orange chocolate coffee cake, crème brûlée, profiteroles and churros. On the palate we found oaky spiciness and a Portuguese bifana sandwich; sliced pork marinated and simmered in a white wine, garlic and paprika sauce then served with piri-piri and mustard. Water brought salami with fennel, duck breast pastrami and a beetroot salad. To finish we dipped apple slices, Polish sausage and bread cubes into a cheese fondue made with Belgian kriek lambic. Following 13 years in an ex-bourbon hogshead, we transferred this whisky into a first fill American oak PX hogshead.
