An autumnal aroma on the nose neat, cherries with a cinnamon dusting, blackberry jam with lemon and nutmeg and an aged apple brandy. On the palate Tunnock’s milk chocolate tea cakes, coconut macaroons, chewy toffee and fudge. Following reduction honey clustered cereal, freshly baked brioche and croissants appeared and with time the scents of sweet hay, flower stems, honey and salted butter developed. To taste, salted malted crispy chocolate chip cookies accompanied by a mixed berry smoothie. Following eleven years in an ex-bourbon hogshead, we transferred this whisky into a 2nd fill heavily toasted and medium charred 2nd fill hogshead.
