aves of herbs and moss-filtered woodsmoke washed over salt-crusted driftwood amid a beach of seaweed, nuts and barbecued kippers. A big palate enveloped the senses with medicinal applewood smoke and streaky bacon while a syrupy sweetness joined prawn cocktails and hints of menthol. Gentle fruits and seaside heather emerged with water, now with lemon sweets, caramel and tarry ropes on a ships decking. Warming ginger joined salted liquorice and thyme in the mouth before lobster and crab meat complemented burnt cream and baked banana. In 2017 we combined selected hogsheads before returning the single malt to a variety of different casks to develop further. This is one of those casks.
