Tasting Notes
We found a superb aroma of brake fluid and hot brake pads at first nosing. This was a typical funky and charismatic rum with underlying aromas of salted liquorice, olive brine and bicycle inner tube. Water revealed smoked aniseed, fish sauce, pickled gherkins and preserved lemons in brine. The neat palate was more exotic and estery than anticipated, with some lovely flavours of overripe pineapple and mango pulp, then bandages and seawater galore. With reduction we got smoked sardines, barbecue coals, dark 'n' stormy cocktails full of raw ginger, and hints of lime pickle and habanero hot sauce.
