Tasting Notes

Initial nosing suggested this was a lighter example than other casks from this batch. Some lovely, and very elegant, notes of honeysuckle, aged sweet wines and wet autumnal leaves greeted us. Reduction brought more floral vibes of hot greenhouses, along with fruit cake and satsuma. The palate opened with a rush of tropical fruits. Exotic fruit squash, fruit salad, mango puree and guava jam. With water it retained this luscious and mellow edge but evolved towards maple syrup, walnuts and a satisfyingly creamy custard vibe.
