Tasting Notes

On a cool Indian summer’s night, we imagined walking through a forest lit by the full moon. The palate was a burst of dark winter spices, lots of toffee and caramel with sherry vinegar and chestnut jam in the big finish. With water we collected mushrooms in a burlap sack and red apples in a leather pouch while smoking golden tobacco. We then sat on a recently fallen tree and had tiffin - crushed biscuits with sugar, syrup, raisins, cherries and cocoa powder covered with a layer of melted chocolate. After five years in an ex-bourbon hogshead we transferred this whisky into a first fill Spanish oak oloroso hogshead.
