The initial impression was one of freshness and invigoration. A haystack near a coastline, with white flowers, sea greens, myrtle, gorse and sandalwood all drifting on the breeze. Beyond that we found pollens, chalk, crushed seashells, beach pebbles, olive oil and stone fruits. Beautiful! Water gave us chalkier notes, cereals, pure seashore freshness, seaweed crackers, ramen broth and witch hazel. The mouth was initially citric and lightly sweet with lemon jelly, melon curds and then a drier shift with pasta water, mustard powder warmth and starchy waxes. Reduction brought out wild coastal herbs, green tea with lemon, mineral salts, toasted fennel seeds, sea buckthorn and hessian.
