The Panel found this an immediately classical and textbook example of this terrific modern make. Lashings of medicine, smoked mint and strong suggestions of a cow swimming in a sea loch. Kippers in old welly boot left in the sun. Fermented black olive tapenade, soy sauce, fish paste, anchovy butter, WD40 and pickled mackerel. Reduction brought a whizzing stab of flint smoke, smashed quartz, smouldering rosemary branches, burnt bark ashes, caraway and a milk pale full of petrol. The neat palate was solidly smoky and vividly full of wintergreen, TCP-soaked bandages, fat farmyard funk, broken tractor engines and aged rubber tyres. Water revealed undercurrents of heather honey, singed hessian, seawater, lime pickle, witchy brews, red diesel, natural tar and iodine drops sprinkled into salty porridge.
