The nose wafts perfumed, shamanic, apothecary, witchcraft smoke; burnt twigs, singed lemon and grilled fish skin; cinnamon sticks in honey, smoked trout paté and Frito pie. The palate delivers a big smoky tasty beast – hickory-smoked hotdogs, over-toasted marshmallows and rosemary and fennel on barbecued fish – then a finish of liquorice, cinders and fire breather’s throat. The reduced nose finds brine-soaked leather, harbours, gym shoes, hints of farmyard and nettles by a new road. The reduced palate is juicier and easier – lemon, fish stew with croutons and black pepper, herbal smoke and a boisterous finish of Tangfastics and damson gin with tonic.
