Tasting Notes
The nose combined seaweed on a pebble beach with the freshness of fino sherry and the sweetness of honeycomb bars and honey-roasted nuts. Smoke was more definite on the palate – barbecued charred pineapple, ash and antiseptic; then peppermint and chilli heat to finish. The reduced nose evoked old school blackboards and chalky sweets, toffee and lavender hand soap. Lavender, parma violets and smouldering heather were evident on the palate; the finish found salty lemon and tobacco. At seven years of age, we combined selected casks from this distillery, and then returned the single malt into a variety of casks to develop further. This is one of those casks.
