Tasting Notes

The aroma burst form the glass with that familiar sweet, scented peat smoke. Perfumed, we though, but not in a 1980s way. Beyond that we noted scented waxes, herbal smoke, long-aged smoked teas and beach pebbles. Just beautiful! With water we found samphire in salted butter, BBQ coals, dunnage must, herbal teas, linens, drifting peat smoke and kelp. The neat palate was immediately brilliant. A big, generous swoosh of sweet peat smoke, crisp coastal freshness and things like wet wool, pollens, seawater and umami herbal broth. Reduction made the texture stunningly oily and mouth-coating. While adding notes of wintergreen, aniseed, camphor, pine resin and iodine drops.
