Introducing the Smoke & Symphony Pair – a study in the unlikely harmony of fruity flavours. On one side, there’s Cask No. 29.313: Jaffa baklava, an Islay malt wreathed in wood smoke complete with herbal fruitiness and mulled-wine spice. On the other, Cask No. 84.39: Symphony in yellow is a bright Speyside refrain of yellow fruity aromas, sweet spice and vanilla cream. This unlikely pairing puts smoke, sticky honey and figs next to poached pears, yellow roses and warming spices for the ultimate compare and contrast.

Cask No. 29.313: Jaffa baklava
Bold & Peaty | Initial cask: Ex-Bourbon; Final cask: First Fill American Oak PX | 10 years old | 59% ABV
The nose erupted with a fresh burst of mint leaves and laundry fluttering above chalk cliffs, while we laid out a picnic of glazed lobster, roast duck and bread straight from a wood-fired oven. Taking a sip sent us on a journey, via cough sweets and liquorice, to cocktails conjured from herbal liqueur, bitters and mouthwash. A drop of water unleashed a fruity dimension, with bramble jam and fig rolls joining our flagons of sticky honey mead. On the reduced nose, we pulled smoked baklava topped with hazelnuts from the hamper, before adding plates of sweet iced biscuits and fruit cake, and a vase of geraniums in rosewater. To taste there was now a distinct jaffa orange note fused with ripe tangerines, plus ash-covered crowdie and confit pears, shifting on the finish to satsuma peel and glühwein spices. After spending eight years in an ex-bourbon barrel this was transferred to a first fill American oak Pedro Ximénez barrel for the remainder of its maturation.
Cask No. 84.39: Symphony in yellow
Sweet & Zesty | Cask: Refill ex-Bourbon Hogshead| 17 years old | 58% ABV
Warm aromas of creamy sweetness lifted our spirits – vanilla cream and crème brûlée, runny honey, foamy shrimps, banana sweets and Italian nougat; all perhaps served on a board of waxed and polished wood. The palate was intriguing, mainly fruity (rhubarb rock, peach flan, kiwi and strawberry cheesecake), but with subtle warm, sweet spice – boiled sweets, fig jam and pink peppercorns. The reduced nose created a curious symphony of yellow aromas – pineapple, lemon puffs, yellow roses, poached pears and vanilla ice cream. The reduced palate found tropical fruits, coconut, salted almonds and sweet pickled cucumber, with cardamom, oak and effervescent fizzy drink crystals to finish.
