Tasting Notes
A lingering, sweet smoke greeted us as we poured the sample into the glass. It reminded some of walking on a beach where Arbroath smokies are traditionally smoked in barrels over an oak fire. We were offered a fish hot from the barrel with that unique flavour, rich and smoky yet slightly sweet and salty, with a tender creamy texture – there is no other taste like it. After reduction, the scent was even more maritime: think fishing nets, lobster creels, tarry ropes and oilskin jackets. To taste, we found torched lemon meringue pie, ash-coated milk chocolate and smoked cardamom ice cream with salty honey.
