Tasting Notes
We noticed the extremely pale colour, but don’t let that put you off. The aroma was that of wakame and prawns smoked on a barbeque, and a green olive tapenade. On the palate, lemon chilli-glazed chicken wings, scorched rosemary, charred wood and liquorice, as we all questioned whether one always needs an active cask when you can taste something like this which was so "pure and naked". Water added sweet barley notes entwined with seaweed and sea salt. The flavour was that of smoked dry-roasted peanuts as well as smoked woodpigeon on toast, all washed down with a cloudy mulled cider.
