A seaweed salad sushi style: pineapple wakame with smoked heather honey, toasted sesame seeds dressed with Ponzu, a citrus sauce made with yuzu juice, soy sauce and little sugar. A sugared puff of smoke on the palate neat; imagine a gingerbread house with sugared peat smoke rising from the chimney followed by a heather coulis with a sprinkling of ashy lavender. After the addition of water, we baked sole fillet the Mediterranean way - oily and spiced in a buttery lime sauce with onions, dill and capers and enjoyed white wine sangria with a shot, or two (maybe three) of smoky whisky.
