Tasting Notes
We imagined a late afternoon/early evening as we sat on a sunlit veranda in a rocking chair with a glass of chilled passerina wine from Italy, enjoying the typical aromas of bright citrus fruits and white peach. On the palate we had salted crisps with a chive and onion dip followed by grilled snapper in a red pepper sauce. After reduction we found bags of brown sugar; the intense sweetness avoided being cloying due to lingering background notes of leather and lightly smoky, spicy roasted almonds. To taste, a beautiful balance of rum-like sweetness and dry oak tannins. In the finish one Panellist was reminded of Vietnamese iced coffee.
