We imagined walking upstairs to the bar of this distillery overlooking Lochindaal and the exotic, fruity, sweet and slightly smoky scent gave us the impression of being somewhere in the Caribbean. Aptly they had on the drink’s menu a pear juice mojito, but of course instead of vodka using the ‘house-dram’ - very moreish and mouth-watering which we enjoyed sitting on the balcony. Following reduction, we got a whiff from the smoking kiln pagoda entwined with the warm sea air as we ordered another cocktail this time with peaty pineapple chunks, and peaty poached pears enjoying the calm and the peace as the sun dipped gently into the sea.
