Sweet applewood smoke encased a menagerie of shellfish, apple slices and marshmallows while toasted pine nuts and roasted chestnuts joined salted caramel with rum and raisin ice cream. Clean smoke continued onto the palate with a large dose of toffee, dark treacle and molasses merging with coal dust, kippers and pineapple chunks. Water created a more maritime feel as salty notes joined bacon, cured salmon and lapsang souchong tea. Finally came nutmeg and cinnamon with dark rum, still with hints of salt but now with marzipan, figs and sage-infused smoked mussels.
