Tasting Notes
We prepared a hot sauce, West Indian style, with spice coming from the scotch bonnet peppers and fruity aromas from mango, pineapple and guava. Plenty of lovely esters on the palate neat with pear drops, foamy banana sweets and candied hazelnuts but, at the same time, a cinnamon spiced hot orange juice. Following the addition of water runny honey, roasted vanilla pods, American cream soda, coconut and oak shavings appeared while the taste had plenty of sweet goodness with jelly babies, milk bottle chews and pink wafers. In the finish we found sweet peppered baked bacon and allspice pickled watermelon rind.
